GARLIC SCAPES - (LOCAL) NON-CERTIFIED ORGANIC PRACTICE
Garlic Scape Pesto - Classic Recipe
1 Cup (or less) freshly grated Parmesan Cheese.
1-2 Tablespoons freshly squeezed lemon juice (adjust to taste)
1/4 Lb. roughly chopped garlic scapes (about 1 to 1-1/2 Cups)
1/2 EVO (Extra virgin olive oil)
Salt & pepper to taste
1. Put garlic scapes and juice in a food processor and puree, slowly adding the EVO. Pulse until you like the consistency (careful to leave in some texture!)
2. Gently stir in the cheese - don't over mix or the cheese will get "gummy."
3. Taste and then adjust juice, season with salt & pepper to taste.
4. Store in sealed container in refrigerator for 2-3 days. Freeze for longer storage (if freezing do not add cheese - wait until defrosted and then add the cheese).
Add a handful of fresh herbs such as parley, cilantro, basil (try our many varieties), or thyme
1/4 Cup of Walnuts
Use this as a topping for pasta - alone or mix with sautéed chard & garlic. Also delicious in many other dishes!
